Vegan Cornbread

Cooking Directions
- Preheat oven to 400F. Grease a square baking pan with vegan butter.
- Sift dry ingredients together in a medium mixing bowl.
- Blend or food process soy milk, oil and tofu until smooth.
- Make a well in dry ingredient bowl, and slowly add wet mixture, mixing to maintain and thick pancake batter-like consistency.
- Pour into greased pan and bake for 20-25 minutes until toothpick comes out clean.
