Roasted Garlic Tofu Hummus

Roasted caramelized garlic blended with tofu for a thick and creamy dip

Cooking Directions

Preheat oven to 400°F

  • Rub garlic with olive oil and top with a pinch of salt.
  • Create an aluminum pouch, place garlic inside, cover and roast for 30 minutes or until browned.
  • Once garlic has browned and cloves have softened, remove garlic from oven and let cool.
  • Squeeze garlic cloves from skin; discard skin and set garlic aside.
  • In a food processor combine tofu, garlic, olive oil, lemon juice, and salt; pulse until smooth.
  • Cover and chill hummus in a refrigerator before serving.

  • 2 large heads of garlic, tips cut off and bulb intact
  • 1 Tbsp. olive oil
  • ¼ cup extra virgin olive oil
  • 3 Tbsp. lemon juice
  • 1 tsp. salt
