Curried Tofu and Edamame Salad

Cubed tofu, crisp celery, edamame, sweet raisins and sliced almonds mixed with a creamy curry dressing. Great on its own, with crackers, or on a bed of salad.

Cooking Directions

  • Whisk yogurt, mayonnaise, Dijon mustard, curry powder, lime juice, salt and pepper in a large bowl.
  • Stir in celery, raisins and edamame.
  • Add tofu and almond slices. Mix well.

  • 1 pkg. House Foods Super Firm Cubed Tofu
  • 1 cup edamame, boiled
  • ½ cup celery, chopped
  • ½ cup raisins
  • ⅓ cup sliced almonds

Dressing:

  • ⅓ cup low-fat plain yogurt
  • 3 Tbsp. reduced-fat mayonnaise
  • 3 Tbsp. Dijon mustard
  • 1 tsp. curry powder
  • 1 Tbsp. lime juice
  • Salt and Pepper to taste
