Cooking Directions
- In a large pot, sauté the shallot, garlic, and ginger with oil/water until fragrant, about 4-5 minutes.
- Add in carrots, bell pepper, curry + tomato paste, and spices. Mix until evenly incorporated.
- Pour in the coconut milk, tofu and cauliflower. Cover and let simmer on medium-low heat until the veggies are tender, about 8-9 minutes.
- Serve warm with rice and enjoy!

- 1 bell pepper, chopped
- 2 Tbsp. red curry paste
- 3 Tbsp. tomato paste

- ½ tsp. sea salt
- 1 14-oz. can coconut milk
