Red White and Blueberry Tofu Popsicles

Celebrate the great U-S-of-A with this patriotic treat! Combine a few simple ingredients like strawberries and blueberries with coconut milk to help you stay cool this 4th of July.

Cooking Directions

Prepare red layer:

  • Divide one package of House Foods Tofu Soft into three.
  • In a blender, add tofu, strawberries, sugar, coconut milk and lemon juice until smooth. Pour into popsicle molds until it runs out, about 12 popsicles, freeze for several minutes.

Prepare white layer:

  • Rinse blender, then blend tofu, coconut shaving, sugar, coconut milk and lemon juice until smooth. Pour on top of first red layer, freeze for several minutes.

Prepare blue layer:

  • Rinse blender, then blend tofu, blueberries, sugar, coconut milk and lemon juice until smooth. Pour on top of blue layer, freeze for 4 hours.

Red layer:

  • 1 pkg. House Foods Soft Tofu, divided into 3
  • ½ cup fresh strawberries
  • 2 Tbsp. sugar
  • ¼ cup coconut milk
  • ½ tsp. lemon juice

White layer:

  • ½ cup coconut shaving
  • 2 Tbsp. sugar
  • ½ cup coconut milk
  • ½ tsp. lemon juice

Blue layer:

  • ½ cup fresh blueberries
  • 2 Tbsp. sugar
  • ¼ cup coconut milk
  • ½ tsp. lemon juice

Special tools:

  • Popsicle molds
  • 12 Popsicle sticks
