Lemon Bars
Vanilla, freshly squeezed lemon juice with its zest blissfully compose this vegan treat.

Cooking Directions
- Preheat oven to 350 degrees.
- Grease an 8x8 baking pan with canola oil or cooking spray and dust with flour.
- To make crust, mix all ingredients by hand or with an electric mixer until it forms a dough.
- Press dough into bottom of greased pan and bake for 10 minutes or until half baked. Set Aside.
To make filling:
- Drain tofu and blend in a food processor until smooth.
- Combine sugar, lemon zest, juice, flour, vanilla and cornstarch with puréed tofu in blender.
- Pour the filling over the baked crust and bake for 40-45 minutes until it has thoroughly set .
- Remove from the oven and place on a wire rack to cool.
- Cut into squares and dust with powdered sugar.
Ingredients
Crust:
- ⅓ cup corn oil
- ¼ cup granulated sugar
- 1 Tbsp. confectioners sugar
- 1 cup flour
- ¼ tsp. vanilla extract
- ¼ tsp. salt
Filling:
- ½ pkg. House Foods Firm Tofu
- 1 cup sugar
- 1 Tbsp. lemon zest (about 2 lemons)
- ⅓ cup fresh lemon juice
- ½ tsp. vanilla extract
- 2 Tbsp. flour
- 2 Tbsp. corn starch
- confectioners sugar sifted to garnish
