Cooking Directions
Prepare fries according to package directions.
In a saucepan melt butter over medium heat. Whisk in flour and cook for 1 minute. Slowly add milk, whisking until smooth. Bring to a boil and reduce heat and simmer for 5 minutes. Whisk in cheese until melted. Cook sauce an additional 1 minute. Keep sauce warm.
Take the tofu and wrap it in a few layers of paper towels and place it on a plate. Take a heavy skillet and push down on the tofu until the paper towel has sufficiently soaked in the tofu’s liquid. Unwrap the tofu and crumble it into a bowl.
In a skillet heat oil over medium heat. Add onion, garlic and jalapeno. Cook for 5 minutes or until onions are tender. Add crumbled tofu. Then add tomatoes, chili powder, black beans and corn. Bring mixture to a boil. Then reduce heat and simmer for 10 minutes.
Place french fries on a serving platter. Spread tofu chili over french fries. Then pour cheese sauce over chili. Sprinkle with chopped green onions and chopped cilantro.
