Creamy Avocado Fettuccine

This pasta gets creamy sauce from avocado and light cream cheese blended with basil leaves and tangy lemon juice.

Cooking Directions

  • Prepare noodles according to package instructions. Cut into manageable size.
  • In the bowl of a food processor add avocado, cream cheese, basil leaves, lemon juice and olive oil. Puree until smooth.
  • In a pan over medium heat, combine avocado mixture and noodles. Heat for 1 minute. Add salt, pepper and garlic powder. Top with parmesan cheese and serve.

  • 2 pkg. House Foods Smart Noodle or Tofu Shirataki Fettuccine
  • 1 avocado, pitted
  • 2 Tbsp. light cream cheese
  • a few basil leaves
  • dash garlic powder
  • salt and pepper to taste
  • 1 tsp. olive oil
  • juice from ½ lemon
  • parmesan cheese (optional topping)
