Chorizo & Tofu
For those with egg allergies, you can swap eggs for tofu

Cooking Directions
Set a large pan to medium heat and add oil. Once oil is hot add potatoes and let cook.
Once potatoes have cooked through, add chorizo and pan fry.
Add onions and saute until translucent, then add the bell peppers.
Once bell peppers begin to brown, add tofu. Stir in tofu until well combined.
Season with salt to taste and serve hot.

½ cup onions, diced
