Chorizo & Tofu

For those with egg allergies, you can swap eggs for tofu

Cooking Directions

  • Set a large pan to medium heat and add oil. Once oil is hot add potatoes and let cook.
  • Once potatoes have cooked through, add chorizo and pan fry.
  • Add onions and saute until translucent, then add the bell peppers.
  • Once bell peppers begin to brown, add tofu. Stir in tofu until well combined.
  • Season with salt to taste and serve hot.

Ingredients

  • 1 pkg. House Foods Tofu Firm or Extra Firm, drained and crumbled
  • 1 cup potatoes, diced
  • 1 cup beef chorizo, skin removed and crumbled
  • ½ cup onions, diced
  • ½ cup red bell peppers, diced
  • Salt to taste
